Alaskan King Crab Cakes

Living in Alaska we have access to fresh seafood all the time. Friends will regularly drop by with half a crab or part of a fish. Last week we were given 4 king crab legs. They were already steamed so all we had to do was heat them up!

My husband is the best. He takes all the meat out of the crab legs for us and puts in a big bowl. If you have not had king crab before, let me tell you that the taste is rich and buttery. I can not eat a lot of it because it is so rich. So we had some leftovers. I packaged them up and put them in the fridge. Then I hit pinterest. I began looking for a simple recipe to make crab cakes with. I found several, but realized I don’t need a recipe and I had all the ingredients.
So for Sunday brunch I whipped these babies up!

Alaskan King Crab Cakes

Alaskan Crab CakesIngredients:
Crab. I had about a quarter pound
3/4 cups bread crumbs
2 eggs
1 tbsp mayonaise
couple of shakes of garlic salt

1. preheat over to 375 degrees
2. put crab in food processor add all the other ingredients as well.
3. Pulse until mixed. Do not over mix. It will come together quickly.
4. spoon crab mixture into greased muffin tin.
5. Bake for 20 minutes

You can also fry these up in some oil on the stove top. Just form them into small patties first. Don’t over do it on the garlic salt!

These crab cakes are great for brunch, lunch or dinner. What a great way to pamper your guests the next time you have a dinner party! Your friends will go wild over these simple crab cakes. You will be the star!
