My mom made this easy Reuben bake recently. She called me to tell me she had an idea for my blog. Now I don’t shy away from readers, even if it is my mom, who tell me they have an idea. So here is her recipe. Thanks mom!
Easy Reuben Bake
1 tube refrigerated crescent rolls
1/2 pound sliced Swiss cheese
1/2 pounds sliced deli corned beef
1/2 can sauerkraut, rinsed and well drained
1/2 cup Thousand Island salad dressing
1 egg white, lightly beaten
2 teaspoons caraway seeds
Unroll one tube of crescent dough into one long rectangle; seal seams and perforations. Cut in half, save second part for the top layer.
Press onto the bottom of a greased 9 x 9-in. baking dish.
Bake at 375° for 8-10 minutes or until golden brown.
Layer with half of the cheese and all of the corned beef.
Combine sauerkraut and salad dressing; spread over beef.
Top with remaining cheese.
Place top layer over cheese. Brush with egg white; sprinkle with caraway
Bake for 12-16 minutes or until heated through and crust is golden
brown. Let stand for 5 minutes before cutting.
Yield: 4 servings.
My mom didn’t say where she got this recipe from. I think I have seen it floating around from Taste of Home. I really can’t take credit for this, since I haven’t made it, mom did! I just wanted to share something different with you.
