I saw this recipe on a friend’s page on Facebook. Usually I don’t participate in those sharing strings because most of the time they do not link back to the official blog post which hurts fellow bloggers. This post had a string of comments from friends of my friend that posted it saying they loved these and just made them as well. I clicked through and it took me to the actual blog. Yay! So I thought I would give them a try. Little Crab really enjoyed helping me make these oatmeal cupcakes!
5 cups Rolled oats
2 1/2 Overripe bananas (I used two, it’s all I had)
1 tsp Salt
5 tsp Honey
2/3 cup Chocolate chips
2 1/3 cups Water
2 1/2 tsp Vanilla
Preheat oven to 380 degrees. Line cupcake tins (Little Crab loved helping with this part).
Combine dry ingredients and stir well. (again Little Crab likes pouring and stirring)
Combine wet ingredients in separate bowl including banana. Mix wet into dry then scoop into cupcake liners. These do not rise so you can fill them as full as you want. Bake for 21 min. Enjoy warm or freeze for later.
