 Slave To The Kitchen: Red Velvet Poke Cake

Have you ever made a poke cake before? I had not, until I found this and decided to try it. Thanks once again to Pinterest! Now the recipe I found was chocolate cake and Oreo pudding. I decided that since Valentine’s Day is coming and I would like to make something for my family, I would change things up. I bought a red velvet cake mix, two boxes of cheesecake pudding and a tub of cool whip.

Step one: Mix up the cake mix as directed on the box, pour into 9×13 pan and bake as directed. I baked mine for 35 minutes at 350 degrees.

Step 2: Take the cake out of the oven and let cool for 5 – 10 minutes. Mix up the 2 boxes of pudding with 4 coups of milk. I used a whisk to combine them.

Step 3: Once the cake is cool. Use the handle of a wooden spoon to “poke” holes in the cake. Make sure you get all the way to the bottom of the pan with your spoon handle so the pudding can soak down.

poke cake 5Step 4: Pour in the pudding! Refrigerate for about an hour for the pudding to set up. I got back to it about two hours later and it was fine.

poke cake6Step 6: Once refrigerated you can top it with cool whip. I added red food coloring to mine to make it pink. I also had sprinkles and milk chocolate chips on hand so I used them. Use what you have!
