I work part time outside of the home. Four nights a week we get home just after 5pm. On the other three days we have play dates, visit relatives and play, play, play. I am always looking for easy things to fix. I don’t love to cook and labor intensive recipes don’t seem to come out right for me. I like to keep it simple and delicious.
I really can’t remember where I got this recipe from. I have been making it for 10 years or so.
Basically all you do is put your chicken in the crock pot and pour in the salsa. Cook on high for 2 hours or low for 3-5 hours. Because crock-pots vary in cooking temperatures, it is a good idea to keep an eye on this one. This is not an all-day slow cook recipe. I shred the chicken with two forks just before serving.
I serve these will taco fixings. I really like to have corn chips available and tortillas. I shred up some lettuce, open a small can of black olives, dice some onion, and pull out the cheese and sour cream.
