Mornings are usually rushed in my house. We eat something to serve as breakfast as we walk out the door or while we are driving to school. I am always looking for something to make that can be easily transported so I don’t have to buy pre packaged food. I recently found a recipe for Power Balls and decided to try it. They turned out good, but I have been adjusting my recipe. This last batch was the best power bites that I have made yet; and they are actually semi healthy. What? Below is what I did.
The Best Power Bites I have made yet!
1.5 cups of rolled oats
2 large tablespoons of creamy peanut butter
1 large tablespoon of Nutella
1 tablespoon of probiotics (I have capsules so I broke them apart and added the powder of about 10 capsules)
1 tablespoon of Turmeric (again I have capsules so I broke them apart and added the powder of about 10 capsules)
1 packet of powdered greens ( I got a free sample from a company)
Honey. I eyeball this and stir. If it is too dry I add more until everything mixes well.
Stir. Stir. Stir until everything mixes well. It will be thick.
Refrigerate for a couple of hours or overnight.
Line a cupcake pan with paper liners. This is the easiest way I have found to package my bites up. I scoop up a large tablespoon of oat mixture and form it into a ball. It will be easy to work with since it has been in the fridge for a while. If you are trying to do this without cooling it, the mixture will be really sticky and get your hands messy. (yea, I found this out the hard way!) Drop each ball into a cup cake liner. I then package my two to a sandwich bag. I keep mine in the fridge drawer in that shelf with the lift up door. These are so easy to grab in the morning and super filling. You cannot taste the added powders, so don’t tell the kids! They taste like a peanut butter cup!
Give these to you kids as they run out the door to catch the bus! The protein will keep them full and help them concentrate at school!
